PORK BELLY BACON BOURBON BAKED BEANS
INGREDIENTS
1 DICED ONION
4 CLOVES GARLIC MINCED
1 SLAB OF PORK BELLY CUBED
LOCAL SMOKED BACON
1/4 CUP BROWN SUGAR
4 CANS BEANS DRAINED & RINSED (WE CHOSE 2 BLACK BEANS , 1 BLACK EYED & 1 - 6 BEAN MEDLEY)
THIRD OF A CUP OF MOLASSES
1 CAN TOMATO PASTE
SALT & PEPPER
SPLASH OF BOURBON
LETS COOK!
Strain the 4 cans of beans , rinse and let sit while you prep the remaining ingredients. You can use any beans you prefer. Next I diced the onion and minced the garlic cloves. Followed by cubing the pork belly. ( pork belly can be found at any good butcher shop) . I pre cooked the pork belly. The idea is to brown and give it a bit of a crispy skin. Pork belly has a lot of fat so by doing this the meat was not chewy at the end. Dice the smoked bacon.
Once all ingredients were ready I placed them all into the slow cooker. Add molasses, Tomato paste and brown sugar then stirred. Salt and pepper as desired roughly a good sprinkle of salt and few cranks of fresh ground pepper.
Lastly a splash of your favorite bourbon. I might of made it 2 splashes but whos counting :). I used Knob Creek bourbon. Stir once more to incorporate everything well.
Set the slow cooker to 8 hours low. Occasionally throughout the day I stirred as liquid did develop at the bottom. Serve with Naan bread or any side you prefer and enjoy!
