FLANK STEAK

INGREDIENTS

1 RED ONION

4 CLOVES GARLIC

1 LOCALLY SOURCED FLANK STEAK

OLIVE OIL

KOSHER SALT

FRESHLY CRACKED PEPPERCORNS

APPLE CIDER VINEGAR

1/4 JAR SWEET PEPPER SAUCE

1 TBSP J & A FARMS DRIED PARSLEY

To start dice up the red onion and garlic. Add in a bowl with 1/4 jar of the pepper sauce. Option if you love heat there is a hot pepper sauce version or just add chilis to your marinate.

Next add the olive oil and vinegar to the bowl. You need enough to create a paste to rub onto the flank steak. Basically a 2 to 1 ratio of pepper sauce and apple cider vinegar. Apple cider vinegar helps with the breaking down of the tougher tissues in the meat.

Add the flank steak to the bowl or pour the marinate over the meat. At this time I add the remaining ingredients. Dried parsley, freshly cracked peppercorns and kosher salt. Measurement with salt was tough as everyone has different ideas when it comes to seasoning. I’ve learned to lean towards more salt especially when marinating is involved. Liberally cover the meat with salt. (Est 3 - 4 tbsp) Rub the paste thoroughly over the meat. Might have to get messy here with the hands. Leave in the bowl or dish, cover and refrigerate. I went with about 4 hours.

Before starting cooking process remember to remove the steak from the fridge so it can come back up to room temperature.

Cooking options : Cast iron pan, indoor grill, BBQ or oven roasting. We chose an indoor grill. Low heat on the grill. Started at 250 degrees F. Remember Flank steak is a tougher cut of meat. It will need a slow and low style cooking process. Patience is key and you will be rewarded with an absolutely tender cut.

Cook meat until internal temp reaches 130 to 135 F. This is for Medium Rare. Once you reached your desired doneness remove from the heat and let the meat rest for about 10 min. Then cut strips against the grain as seen in one of the pictures above and enjoy. We had it with homemade pita bread. Enjoy!
