THE FARM BREAKWICH
Here is what you will need.
3 farm fresh eggs
J & A Farms hot banana peppers
Butter
Salt & Pepper
Mayo
1 Tbsp Olive oil
Ripe avocado
1 sausage
Fresh parmesan
Green onions diced (as much or as little as you like)
Cheddar cheese
Step 1: Remove the casing from the fresh sausage. You can use your favorite one. I chose Mild Italian. You can also get sausage filling without the casing.
Form the sausage into a patty sprinkle salt and pepper on both sides and pan sear both sides on high until you get a nice crisp. Once cooked set aside.
Step 2: Remove avocado from its skin and mash in a bowl. Add salt and pepper and mix into a chunky paste. At this point take some J & A farms pickled hot banana peppers and dice them up. Mix them into the avocado mash. If hot is not your thing we sell sweet banana peppers to. Set this aside as well.
Step 3: Crack 3 eggs or more into a bowl. Whisk and add black pepper and diced green onions. Do not add salt to your eggs prior to cooking. This will release the moisture and can cause the eggs to be soggy. Once eggs are whisked prepare olive oil in a pan and pour the eggs into it. Let the eggs cook on one side. Do not stir or break them up once in the pan. Flip the entire egg flap once and allow to cook. Grate some fresh parmesan onto the eggs while they cook. Once cooked season with salt and remove from heat.
Step 4 Prepare the bun by toasting it. Brush some butter onto each bun. Prep the bun further by spreading some mayo. Once the bun is ready add the sausage patty,
Step 5: Time to build. Take your toasted bun add the sausage patty. Then fold your egg flap. Cut half way down and start to fold one side over onto the other the fold again until you get what looks liek a stack of eggs. Place on top of the sausage. Then add cheese. Spread the avocado mix onto the other bun. Close up this giant breakfast sandwich and enjoy with a nice cup of Barnwood coffee. Enjoy!
