fresh fennel salad

The simplest yet refreshing salads to make.

Step 1 Buy a nice large sized fennel bulb.

Step 2 Keep refrigerated

step 3 Once cooled cut bulb in half and then start to slice. thin to medium slices will suffice. You can save the green tops for soups or vegetable stocks if the bulb is not trimmed from the grocery store or you local farmers market.

Step 4 Toss with kosher salt and extra virgin olive oil. Once mixed just serve.

Options - add balsamic vinegar

The anise flavor is subtle yet refreshing addition to any dinner. Enjoy!
